4 large eggs
1 tablespoon of coconut oil
1 small onion, finely chopped
2 medium tomatoes, blended
1 small red capsicum , diced
1/4 teaspoon of ginger garlic paste
1/4 teaspoon of turmeric
a pinch of black pepper
1/2 cup of water
A small pinch of salt (optional; for children under 2 years, it’s best to avoid adding salt)
Directions
- Place the eggs in a saucepan and cover them with water and bring the water to a boil and cook the eggs for 9–10 minutes.
- Transfer the eggs to cold water, peel them, and set aside.
- Heat the oil in a pan over medium heat and cook the diced onions until soft and translucent.
- Stir in the minced garlic and grated ginger, then cook for about 1 minute until fragrant.
- Add the turmeric and black pepper, stirring well to coat the onions.
- Mix in the chopped tomatoes and diced red capsicum. Cook for 8–10 minutes until the vegetables are soft and the mixture becomes thick.
- Pour in the water and a pinch of sea salt and simmer for 5 minutes.
- Add the eggs to the curry and simmer gently for another 5 minutes.
- Allow the curry to cool until warm before serving to your toddler.
